Healthy Cornbread

  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ¼ cup honey
  • ¾ cup plain greek yogurt
  • 2 eggs, beaten
  1. Preheat oven to 400 degrees F. Lightly grease an 8x8 inch baking dish.
  2. In a large bowl, mix together flour, cornmeal, baking soda and salt.
  3. Add honey, yogurt and eggs. Stir just until blended, do not over-mix.
  4. Spread batter into prepared pan. Bake in preheated oven for 20-25 minutes, or until center of the bread springs back when gently pressed.
