In a large stockpot or slow cooker, bring apple juice and pure maple syrup to a simmer over medium heat.
Place salt and spices on a six-inch square of clean cheesecloth or any clean, then cotton fabric. Pull up edges and tie with a string to form a bag. *See note below.
Place bag in the juice and reduce heat to medium low to maintain a low simmer. Simmer for at least 20 minutes, or for several hours.
If using a slow cooker, heat juice and spices on low for 2 to 3 hours, and then keep warm.
Refrigerate leftovers and reheat as needed.
*The first time I made this I didn't have any cheesecloth or thin cotton fabric, so I just added the spices right to the juice and then strained the cider with a fine mesh strainer before drinking. It still worked great!
