Easy Mexican Pizza
 
Ingredients
  • 1 Whole Wheat Tortilla
  • 2 tablespoons chunky salsa
  • 3 tablespoons black beans, drained and rinsed
  • ¼ cup shredded part-skim mozarella cheese
  • ¼ red bell pepper, sliced
  • ¼ green bell pepper, sliced
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Spray both sides of the tortilla with a little olive oil. Bake for 3-4 minutes on each side, or until crisp and a little brown.
  3. Top with salsa, cheese, beans, and pepper slices.
  4. Return to the oven and cook until cheese is melted.
  5. Slice and eat the entire thing by yourself. :)
