Healthy Homemade Almond Joy Bites

These homemade Almond Joy Bites are refined sugar-free and made with healthy real-food ingredients! Nothing beats the combo of coconut, almonds and chocolate!

  1. Mix together melted coconut oil, maple syrup, and vanilla. Combine with coconut and salt in a stand mixer or food processor and mix well.
  2. Scoop out the coconut mixture with a tablespoon and then drop onto a plate lined with parchment paper. Use your fingers to pat the mixture into your desired shape. Add an almond to the top of each and then freeze for 15-20 minutes.
  3. Once the coconut is frozen, melt the dark chocolate (I used a Green & Blacks 85% Cacao Bar) in the microwave. I just chopped mine into little pieces and microwaved in 30 sec intervals, stirring between each interval until completely melted. I melted the whole bar, but only ended up using about ⅔ of it.
  4. Now, just cover your coconut bites with the melted chocolate. I just roll mine around in the chocolate and then put them directly onto a piece of parchment paper. When they are all covered, put in the refrigerator for 20-30 minutes, or until the chocolate has hardened.
  5. Now just enjoy! Store leftovers {if there are any} tightly covered in the fridge for up to 2 weeks. :)
