No-Bake Coconut Cookies

Ingredients
1 cup shredded unsweetened coconut
¼ cup pure maple syrup
1 tablespoon unrefined coconut oil
½ teaspoon vanilla
⅛ teaspoon salt
¼ cup of your favorite mix-ins {nuts, dried cranberries, dark chocolate}
Instructions
Mix together melted coconut oil, maple syrup, and vanilla.
Combine with coconut and salt in a stand mixer or food processor and mix well.
Stir in your favorite mix-ins. We love walnuts, dried cranberries, and dark chocolate chunks.
Scoop out the coconut mixture with a tablespoon and then drop onto a plate lined with parchment paper.
Put the cookies in the fridge until firm. Keep leftovers in the fridge in a ziplock or other sealed container.
