These What I Ate Wednesday posts actually get requested quite often, so here you go! Today’s is even a paleo edition! Almost every month I get asked about doing the Feel Great in 8 Challenge while eating a paleo diet {if you’re not sure what a paleo diet is, you can see an explanation right here}. After being asked a few times, I went ahead and tried it out for 30 days. It’s definitely a stricter way to eat than I normally do, but it fit great with the challenge and I like the goal of eating minimally processed real food.
Anyway, last week we had friends over for dinner that are pretty strict paleo eaters. In honor of them, and hopefully to help you out, I ate paleo for the day too. Here’s what I ate and a breakdown of the nutrition.

5am Pre-Workout Snack: Half a banana while running out the door. No time for a picture. 🙂 {44 calories, 0.5g protein, 1.5g fiber}
9am Breakfast: 2 egg omelet with chopped tomato and spinach, and a cup of mixed berries. I just get the frozen mixed berries at Costco and then microwave them for 20 seconds, I love how refreshing they are when still a little bit frozen. {270 calories, 14g protein, 5g fiber}
12pm Lunch: I forgot to take a picture again, but this meal was awesome! Avocado Chicken Salad from Paleo Cupboard – I used cilantro instead of basil, just used leftover Costco rotisserie chicken, and ate it in lettuce leaves. It was so easy and so yummy. I also had 1 cup of mixed raw veggies and a fuji apple. {496 calories, 28g protein, 15g fiber}
3pm Afternoon Snack: Cashew Cookie Larabar – These are so good and the ingredient list is awesome! You can get them for cheap with Subscribe & Save on {Amazon} {230 calories, 6g protein, 3g fiber}
6pm Dinner: We had friends over for dinner that are pretty strict paleo eaters, which is why I decided to make it an all paleo day for me too. We had Cilantro-Lime Pork Tenderloin and Roasted Cauliflower (minus the parmesan). It was delicious! {378 calories, 35g protein, 3g fiber}
8pm Dessert: I made these Dark Chocolate Fudge Tarts since we had guests. They are SO good! I just had half and shared the rest with my toddler who kept begging for more. 🙂 {127 calories, 2.7g protein, 3g fiber}
TOTAL:
{1501 calories, 30g fiber, 86g protein}
