Thanks to a recommendation from my awesome friend Kyla, I gave cauliflower pizza crust a try. I know it sounds strange, but I’m telling you, it was a huge hit! My husband, all three solid eating kiddos and even my picky niece gave it a thumbs up!

The recipe we tried is from The Lucky Penny Blog. She has awesome step-by-step photos and fantastic instructions and I followed her recipe almost exactly, so I’m just going to send you over there to make your own. I doubled her recipe and it was just enough for one meal for my family of 5. Add a side salad and just think of how many vegetable servings you get to mark off! πŸ™‚

It’s definitely not a super quick recipe, so plan this one for when you have 45 minutes or so, but I highly recommend you give it a try. Here is a photo of our dinner – served with a side salad and Homemade Skim Milk Ranch. The ranch was awesome for dipping the crust too. YUM!

*This nutrition information is for the crust only. I added 1/4 cup homemade pizza sauce {recipe to come soon!}, 1 cup mozzarella cheese, and 1/4 cup parmesan cheese as toppings which adds about 56 calories per slice.
