Strawberry Orange Spinach Smoothie | Feel Great in 8 #healthy #recipe #greensmoothie
We absolutely {LOVE} green smoothies at our house!
I love that both my husband and the kiddos enjoy them and I love that they are a quick and easy breakfast option that I can “eat” while I pack lunches, feed children, and just generally run around like a crazy person normal mom. 🙂
Plus, when it comes to the Feel Great in 8 Challenge – you can’t beat starting your day with 2 vegetable servings, 2 fruit servings and half a serving of fiber and protein!
This is a slight variation on the classic Spinach Smoothie. I will warn you in advance though, with the addition of the strawberries, this one doesn’t end up a pretty green like the original. It…well…it’s brown. Pretty much the color of mud. My 7 year old even nicknamed this one sludge. Don’t let the color bother you though, I promise it is really delicious sludge.
Strawberry-Orange-Spinach Smoothie
{Makes 2 Servings}
Ingredients
1 cup canned pineapple chunks and juice*
1 orange
4 cups fresh or frozen spinach
1 cup frozen strawberries
1/2 cup plain greek yogurt
Directions
Throw it all into a blender (I use and love my Blendtec) and mix well. Drink and enjoy your sludge colored mustache.
*Make sure you buy pineapple canned in it’s own juice, not syrup (i.e. sugar)!
TIP: The spinach in the photo is actually frozen. Thanks to a fantastic tip from my sister, I buy the huge bags of fresh spinach from Costco and then just throw the whole bag right into the freezer. It has saved me a bunch of money and saved me from throwing out what we couldn’t quite get through before it went bad. Surprisingly, the spinach leaves stay that gorgeous green color and it is very easy to grab out a few handfuls for a smoothie in the morning.

      Do you peel the orange before you put in the blender.

      You’re fine to leave it out, you just might need to add a little more liquid.
