Bountiful Baskets

I wanted to share with you a fantastic and affordable way to stock your home with healthy and delicious produce.
 
For the past 8 months I’ve been ordering from Bountiful Baskets, a “non-profit food co-op for families that want to have more fresh produce for less money.” You order a basket on Monday and pick it up on Saturday morning. Each basket consists of half fruit and half veggies, but other than that you never know what you are going to get. We love it! The picture above is half a basket from last week (my sister and I decided to share). We’ve been extremely happy with the quality of the produce and it’s been so fun to plan recipes around the items we get and try things I would never have purchased on my own. This past week my husband, the mushroom hater, even devoured a big bowl of mushroom soup!

Walnut Mushroom Soup
(From my Blendtec Cookbook)
{makes 4 servings}

Ingredients 
1 Tbsp olive oil
1 medium onion, chopped
1 lb fresh mushrooms, cleaned, sliced and divided
1/2 tsp dried thyme
1 1/2 c vegetable broth, divided
2/3 c almond or soy milk
1/2 c walnuts toasted
1/4 tsp kosher salt

Directions
Heat oil in pan over medium heat. Saute onions and mushrooms, reserving 1 cup of mushrooms to blend with walnuts. Cook 5 minutes or until softened. Add 1 cup of broth and thyme to pan and bring to a boil. Reduce heat and simmer. Add remaining 1/2 cup brother and 1 cup mushrooms, milk, walnuts to Blendtec jar and secure lid. Select “Batters.” Pour walnut mixture into pan. Allow soup to simmer for a few minutes for flavors to mingle and to thicken. Season with salt and pepper.
