In general I believe that small changes are what make a big difference in our health…drinking more water and less soda, walking a little more, or adding a few more servings of vegetables. I still usually pick just one focus at a time when working on improving myself in any way, but at this point in my life I was just ready for a total diet overhaul.
It started about a month ago when my sister-in-law recommended I watch the documentary “Forks Over Knives.” You should definitely set aside an hour and watch it! You can find it on Netflix, probably at Blockbuster, or on amazon. It’s all about a plant-based diet and how much better it is for your body.
I loved the movie and definitely agreed with most of the opinions in it, but I still wasn’t sold. I honestly couldn’t imagine life without any meat or dairy. And, absolutely no refined flour or sugar? Not possible. Plus, even when I considered giving it a try, my husband was so name game.
Then my sister and her family, who currently live next door, decided to give the “Forks Over Knives Diet” a try for three weeks. My brother-in-law lost 7lbs in the first 7 days and my sister raved about how great she felt. Even my husband was sold.
We decided to commit to 30 days.
I’m still actually shocked that we’ve made it this far. A whole week without any animal products, refined sugar or refined flour.
I feel FANTASTIC! My husband lost 6lbs. We’ve even found some recipes we love. I’ll definitely be sharing a bunch of them with you here on the blog.
So, am I ready to say I will never eat any of these foods ever again? Heck no! 🙂 I’ve found that saying I can never eat a certain food again just causes ridiculous cravings and a crazy over splurge. But, I’d say we are definitely ready to stick to a mostly plant-based diet long term. I guess you’ll be along for the ride as we try to figure out the right balance.
For now I’ll just leave you with our favorite recipe from this week and a funny YouTube video.
We had this fresh and yummy salad one night just like this (click on the photo to find the recipe) and then another night in corn tortillas with cilantro lime quinoa. YUM!
