I’ve told you before that I {love} breakfast foods. If I could, I would eat Whole Wheat Crepes or Blender Waffles with Bacon every morning. Unfortunately, with 4 kids to get ready and fed and out the door, we generally stick with less glamorous breakfast foods. We basically alternate between oatmeal, eggs and whole wheat toast, greek yogurt with fruit, smoothies, or Oatmeal Pancakes from the freezer.Oatmeal is one of my favorites and especially steel cut oats. The problem though, is that cooking steel cut oats on the stove takes 30-40 minutes which is just too long for our crazy busy mornings. Don’t worry though, I have the most amazing overnight recipe to share with you. All it takes a few minutes before bed and a few minutes in the morning. Awesome.
Easy Overnight Steel Cut Oats
{makes 4 servings}
Ingredients
3 1/2 cups water
1/2 tablespoon butter
1 cup steel cut oats
1/4 teaspoon salt
1/2 cup almond milk
1 teaspoon vanilla
Directions
Bring the water to a boil in a medium or large saucepan.
While you are waiting for the water to boil, melt the butter in a large skillet over medium to high heat. Add the oats to the butter and toast, stirring occasionally for 3-5 minutes or until the begin to smell nutty and then remove from the heat.
When the water is boiling, carefully add the oats and salt. Let boil for 1 minute. Watch it closely so that it doesn’t boil over. Remove from the heat and stir. Cover and let sit overnight, 8-12 hours.
In the morning, add the almond milk (skim or soy milk would work too) and vanilla. Stir and heat over medium for 3-5 minutes or until heated through.
Serve with your favorite toppings. π

Such a great idea. I keep thinking I’ll wait up early enough to get steel cut oats done before school and it just never works. 40 minute cook time is a lot in the morning!
