Now, onto the Healthy Homemade Kettle Corn recipe!
You won’t believe how quick and easy it is to make this homemade kettle corn popcorn – no special equipment required! And, by substituting healthy coconut oil and unrefined coconut sugar you can have a healthy, whole grain, sweet and salty snack to enjoy guilt-free.
- 3 tablespoons unrefined coconut oil
- ½ cup popcorn kernels
- ¼ cup coconut sugar
- ¾ teaspoon salt
- Line a baking sheet with parchment paper and set it near the stove. You'll pour the popcorn onto this sheet to cool.
- In a small bowl, stir together the coconut sugar and salt. You'll also want to measure the kernels so that both of these will be ready to add when the oil gets hot.
- Measure the coconut oil into a large 4-quart sauce pot with a lid and drop three kernels of popping corn into the oil. These three kernels with let you know when the oil is hot. Cover withe the lid and set over medium-high heat.
- When you hear one of the kernels pop, uncover the pot and pour in the rest of the kernels and the sugar/salt mix. Quickly stir everything together to coat the kernels and replace the lid.
- Shake the pan occasionally as the popcorn starts to pop, and then more frequently and vigorously as the popping increases. Rest the pot on the burner every few seconds to maintain the heat.
- Listen closely - when you hear the popping begin to slow to 1-2 seconds between pops, remove the pan from heat. Don't wait for the popping to stop completely or you'll burn the popcorn. Total popping time on my gas stove is right around 3 minutes.
- Immediately after removing from the heat, uncover the pot, give the popcorn a quick stir, and then pour it onto the prepared baking sheet. Use a spoon to spread the popcorn into an even layer to cool.
- Let the kettle corn cool for at least 5 minutes - the popcorn with crisp as it cools. Eat immediately or store in an airtight container for several days (if you can get it to last that long! 🙂
- Start cleaning the pan as soon as you dump out the popcorn by filling it immediately with hot water. I just put the pan full of hot water back onto the stove for a few minutes and any cooked sugar cleans off easily.

1. Wholesome Organic Coconut Sugar: This is what I reach for when I need a granulated sweetener. It isn’t as sweet as refined white sugar, but is so much better for you and I love the flavor. This organic brand is awesome and you can get a big bag on Amazon for around $5.
2. Nutiva Unrefined Coconut Oil: I did a lot of research on coconut oil and this Nutiva brand is a good balance between quality and price. I’ve been very happy with the quality and the flavor, but the it isn’t outrageously expensive. I buy the big tubs and they last me 4-6 months, even though I use them often.
3. Stainless Steel Cookware: I got my set of stainless steel pots and pans 6 years ago and they are still my favorites! They look beautiful, even after countless washes in the dishwasher, and they cook and hold heat so much better than any others I’ve tried. I use my biggest stainless pot for this recipe and it works great!

I tried this recipe several times the way it says and the sugar always burned no matter what so it came out bitter. The only way it worked was to melt a little more coconut oil with the salt and sugar in a sauce pan on low heat and then pour it on and toss it in a large bowl

Do you have any thoughts on how to make this if you air pop tbe corn first rather tban in tbe pot?

Mine burned horribly as well. The sugar burned as soon as it hit the pan despite stirring and watching it 🙁
