Stop whatever you are doing and go make this super yummy snack!
Seriously, if you are a fan of pina colada flavor {i.e. coconut and pineapple} you are absolutely going to love this mix! Plus, popcorn is a fantastic low calorie, high fiber snack and adding a little heart healthy coconut oil gives it fantastic flavor.
Pina Colada Popcorn
Ingredients:
3 cups popped popcorn
1 teaspoon unrefined coconut oil
2 tablespoons dried pineapple, chopped*
1 tablespoon dried coconut flakes*
1/8 teaspoon sea salt
Directions:
Microwave coconut oil in a glass dish for about 30 seconds or until melted. Put popped popcorn in a bowl and drizzle with coconut oil. Toss in dried pineapple, coconut and salt. Enjoy!
*Dried fruit often has tons of added sugar, so if you can find it, go for unsweetened freeze dried pineapple and unsweetened coconut. I found these gorgeous unsweetened coconut flakes in the bulk bins at our local health food store. The big chunks added great flavor.

What health food store did you get the coconut and pineapple? I want to go get some and don’t want to waste time looking for it.

Mine came from a small local health food store, but I’m guessing you’d have no problem finding them at Whole Foods or Trader Joe’s.
