This is an old recipe that I am reposting with a new semi-decent photo. Plus, it really is that good and is still a staple at our house 4 years later! 🙂
If you haven’t tried this one yet, you must! I know…sounds disgusting…but it really is surprisingly good! Even my picky husband and kids ask for this one. Plus, you can’t beat spinach for breakfast…two veggie servings already out of the way! 🙂 And, it really doesn’t taste like spinach…I promise!
Tropical Spinach Smoothie
{makes 2 servings}
Ingredients
4 cups baby spinach
1/2 can pineapple & juice (20oz can)*
1 banana
1/2 can pineapple & juice (20oz can)*
1 banana
1/2 – 1 cup water
1 cup ice (or freeze the banana and skip the ice)
1/2 cup plain greek yogurt
*Make sure you buy the pineapple in pineapple juice NOT “heavy syrup” – that just means tons of added sugar.
Directions
Put all the ingredients in the blender and blend until smooth. Enjoy!

We made this tonight and I’ll admit I was a little skeptical because this didn’t have berries, but we all loved this!!! We called it a leprechaun smoothie and my 7 and 4 year olds gobbled it up!! The pineapple really hides the flavor of the spinach. Delicious!!

How do you measure the spinach? Do you smash it down into the cup?

I don’t measure exactly anymore, I just grab 4 or 5 big handfuls. You’ll want all the health benefits of the spinach, so I’d smash it down in there so you get plenty. 🙂

Hi, I see these quantity makes 2 servings if I have one serving how long can I keep the other in the fridge before it has to be drunk ?

Hi Julie! The texture will change in the fridge, it will be more like juice, but it will stay good for a few days. Hope that helps!
