Yesterday I shared a new recipe for Homemade Caramel Sauce {that is Paleo, dairy free, and refined sugar free!} and mentioned that I would be sharing a super yummy way to use the sauce later this week.
This is it! I was planning on posting this recipe for Caramel Pecan Apple Nachos on Thursday, but I just couldn’t make you wait that long. They really are that good.
I’m not sure this can really be called a recipe, since it just requires a little bit of slicing and a bunch of drizzling, but I’m calling it one anyway. My blog, my rules. 😉
And, I’m definitely also calling this one healthy. Again, my blog, my rules. 😉
But really, since this is mostly apples (fiber), some nuts (protein) and a little bit of refined sugar free goodness drizzled on top…I consider it a healthy snack! It would also make a fun healthy dessert, perfect for the fall.
My little ones, my husband and I devoured a plate of these guys and happily licked our fingers clean. I hope you and your family love them just as much!
- 2 medium fuji apples (gala or granny smith would be great too)
- ¼ cup chopped pecans
- 4 tablespoons Homemade {paleo, dairy free, & refined sugar free!} Caramel Sauce
- 2 tablespoons melted dark chocolate (70% cacao or more)*
- *I just melted 2 small squares of one of my favorites - Ghirardelli Chocolate Intense Dark Bar.
- Thinly slice both apples. I cut mine into 16 slices each. If you aren't going to be eating the nachos right away, toss them in a little bit of lemon juice, to keep them from browning.
- Warm your Homemade Caramel Sauce and melt your dark chocolate. I just melt mine in the microwave 20-30 seconds at a time, stirring in between each heating.
- Now just assemble your nachos!
- Start with a layer or apples, then add pecans and drizzle with caramel and chocolate. Then top with another little sprinkle of pecans.
- Enjoy!
