This is one of my favorite fresh summer recipes! It’s perfect to take to a summer party, or even for a cool dinner when you don’t want to heat up the oven. It only takes a few minutes to chop the ingredients and the possibilities for using it are endless – it makes a great topping for tacos and burritos, it is delicious in a quesadilla or omelette, makes an awesome “dressing” on a salad, and of course, is an awesome chip dip! ENJOY!
Corn & Black Bean Salsa

Serves: 12 servings
Ingredients
- 2 (15 oz) cans of black beans, drained and rinsed
- 1 (15 oz) can while kernel corn, drained
- ½ an onion, finely chopped
- 1 green bell pepper, chopped
- 3 medium tomatoes, chopped
- salt, pepper, & lime juice to taste
- 1 avocado, chopped
Instructions
- In a medium bowl, combine black beans, corn, onion, bell peper, and tomatoes.
- Season with a little salt, pepper, and lime juice; mix well.
- Cover and refrigerate to blend flavors. I usually chop and add the avocado immediately before serving so it doesn't turn brown.
