These no-bake coconut cookies are quick and easy to throw together, they are refined sugar-free, and they are absolutely delicious!
The idea for this recipe actually came one day when I was making a batch of Coconut-Lime Crack Bars. I had some of the yummy coconut mixture leftover {the same one I use in these Almond Joy Bites and these Coconut Stuffed Strawberries} and just grabbed some things from my pantry to add in. You can add any kind of nuts or dried fruit, they take less than 10 minutes to make, and they have become a favorite treat/snack around my house.

- 1 cup shredded unsweetened coconut
- ¼ cup pure maple syrup
- 1 tablespoon unrefined coconut oil
- ½ teaspoon vanilla
- ⅛ teaspoon salt
- ¼ cup of your favorite mix-ins {nuts, dried cranberries, dark chocolate}
- Mix together melted coconut oil, maple syrup, and vanilla.
- Combine with coconut and salt in a stand mixer or food processor and mix well.
- Stir in your favorite mix-ins. We love walnuts, dried cranberries, and dark chocolate chunks.
- Scoop out the coconut mixture with a tablespoon and then drop onto a plate lined with parchment paper.
- Put the cookies in the fridge until firm. Keep leftovers in the fridge in a ziplock or other sealed container.

What is coconut oil? Can i find it in my local Target or Walmart or Walmart marketplace grocery store or at local grocery stores? I would love to makr these cookies since i love coconut so much.

When I’ve looked at Walmart in the past, they only had refined coconut oil which won’t work in most of my recipes. I hope that helps!
