These homemade Almond Joy Bites are refined sugar-free and made with healthy real-food ingredients! Nothing beats the combo of coconut, almonds and chocolate!
A few weeks ago when I posted the recipe for {Coconut-Lime Crack Bars} a friend of mine mentioned that she adds a little cocoa and almonds to hers. She’s obviously absolutely brilliant and she inspired me to create these delicious almond joy bites. Thanks Shara! ๐
I love the combination of coconut and lime, but I’m pretty sure nothing beats the combo of coconut, almonds and chocolate! YUM.
Healthy Homemade Almond Joy Bites

These homemade Almond Joy Bites are refined sugar-free and made with healthy real-food ingredients! Nothing beats the combo of coconut, almonds and chocolate!
Serves: 12 bites
Ingredients
- 1 cup shredded unsweetened coconut
- ¼ cup pure maple syrup
- 1 tablespoon unrefined coconut oil
- ½ teaspoon vanilla
- ⅛ teaspoon salt
- 12 almonds (unsalted)
- 2.5 ounces dark chocolate - 70% cocoa or more (melted)
Instructions
- Mix together melted coconut oil, maple syrup, and vanilla. Combine with coconut and salt in a stand mixer or food processor and mix well.
- Scoop out the coconut mixture with a tablespoon and then drop onto a plate lined with parchment paper. Use your fingers to pat the mixture into your desired shape. Add an almond to the top of each and then freeze for 15-20 minutes.
- Once the coconut is frozen, melt the dark chocolate (I used a Green & Blacks 85% Cacao Bar) in the microwave. I just chopped mine into little pieces and microwaved in 30 sec intervals, stirring between each interval until completely melted. I melted the whole bar, but only ended up using about ⅔ of it.
- Now, just cover your coconut bites with the melted chocolate. I just roll mine around in the chocolate and then put them directly onto a piece of parchment paper. When they are all covered, put in the refrigerator for 20-30 minutes, or until the chocolate has hardened.
- Now just enjoy! Store leftovers {if there are any} tightly covered in the fridge for up to 2 weeks. ๐

1.ย Nutiva Unrefined Coconut Oil: I did a lot of research on coconut oil and thisย Nutivaย brand is a good balance between quality and price. Iโve been very happy with the quality and the flavor, but the it isnโt outrageously expensive. I buy the big tubs and they last me 4-6 months, even though I use them often.
2. Pure Maple Syrup: When we started trying to cut back on refined and processed ingredients, we switched to using honey or pure maple syrup to sweeten our treats. Just make sure you look for pure on the label – it’s definitely not the same as pancake syrup. ๐
3. Green & Black’s Organic Dark Chocolate: There are lots of great brands of dark chocolate, but this organic brand is one of my favorites. Just make sure you look for 70% cocoa or higher, so you don’t miss out on all the great health benefits.

I don’t think they would work without the coconut oil. Unrefined coconut oil is unique because it is solid when cool. The reason why this recipe works is because when the coconut oil gets cold it holds everything together. Sorry I don’t have a substitution for you! ๐

I think you could replace the coconut oil with almond butter. I would freeze them a bit more and make sure to dip the bottom of the bites in chocolate to help hold them together and drizzle the chocolate on top..or just roll them all in it! Hope that helps

I’ve made these a couple times and the one thing I didn’t like was sometimes having the almond only in one bite. This time I reduced the shredded coconut to 3/4 a cup and added 1/4 cup chopped almonds. For the liquid mixture I reduced the coconut oil to 1/2 tablespoon and added 1/2 tablespoon of almond butter. Rolled them into bites and dipped in 90% dark cocoa. Perfect!!!

I love this recipe! I’ve actually remade it a bit to suit my diet. I wanted these to be lower glycemic so I made coconut sugar syrup to use in place of maple syrup. Then boiling the syrup till it was very thick and bubbly. Added almond butter to the liquid portion and chopped almonds & hazelnuts to the coconut mixture. I’ve found that they hold together better this way, even with half the amount of coconut oil. Wish I could share my picture of the last batch, topped with grated almonds! Beautiful and delicious!! Thanks so much for this recipe and all the ideas!! Fabulous!!!
