Until probably a year ago I had never even heard of quinoa. {psst…If you still don’t know what quinoa is, don’t feel bad, just jump on over here to read more about it and then come back and check out this recipe! ;)} This Roasted Vegetable & Quinoa Salad is so simple and so delicious! Don’t let the quinoa, or not being able to pronounce the word quinoa scare you away. 😉
Seriously though, this Roasted Vegetable & Quinoa Salad makes a fantastic side dish for just about any meal, but even has enough protein to be a main dish!
Roasted Vegetable & Quinoa Salad
Ingredients
- 1 cup quinoa
- 2 cups chicken or vegetable stock
- ¼ cup finely diced onion
- salt & pepper
- 1 bay leaf
- Oven Roasted Vegetables
- and/or Roasted Garlic Asparagus
- ½ cup chopped parsley {optional}
- juice of 1 lemon {optional}
Instructions
- Add quinoa, stock, onion, salt & pepper, and bay leaf to a small pot. Bring to a boil and reduce to simmer until thoroughly cooked. Remove from heat, fluff with a fork and set aside.
- Roast whatever vegetables you want according to the instructions in {this} recipe.
- Add cooked quinoa, roasted veggies, parsley and lemon juice to a large bowl. Toss together and serve.
- Enjoy!
