I have a What I Ate Wednesday Post waiting, but I couldn’t wait to tell you about this incredible sandwich! It really is that good.
I told you on Monday about the Grilled Cheese Party Buffet we did for my little guy’s 2nd birthday party. It was a huge hit and definitely my favorite party food ever. It was so quick and easy to put together, the guests grilled their own sandwiches, and with lots of different options everyone was able to create a sandwich they loved.
My creation was this sandwich with 9 grain bread, pesto, fresh mozzarella, artichoke hearts, spinach, tomato and avocado. It was so good, I may or may not have made it for lunch everyday for a whole week.
- 2 slices whole wheat bread
- 1 teaspoon pesto
- 1 ounce fresh mozzarella
- ½ tomato, sliced
- 1 marinated artichoke heart
- ¼ avocado, sliced
- 4-5 leaves spinach
- 2 teaspoons butter
- Spread the pesto on one piece of bread and then top with a slice of fresh mozzarella. Add tomato, artichoke hearts, avocado and spinach. Top with another slice of mozzarella and then the second piece of bread.
- Butter the outside of both pieces of bread and then toast on a warm griddle until the cheese is melted and the bread is browned.
