You guys know I get excited about pretty much any healthy recipe, but I’m extra excited to share these cookies with you!

3 INGREDIENTS!

And, not just any ingredients – healthy, real food ingredients that you probably already have in your pantry! Don’t you hate it when a recipe claims to be 2 or 3 ingredients and then calls for a store bought cake mix? So, you know, more like 50 ingredients. 😉

This recipe really does only have 3 HEALTHY REAL FOOD INGREDIENTS!

You literally only need 3 ingredients

  1. Ripe Bananas – They don’t have to be super brown, but the more ripe they are the sweeter these cookies will be.
  2. Old Fashioned or Quick Cooking Oats
  3. PB2 – If you haven’t tried PB2 yet, you absolutely have to! It is dehydrated/powdered peanut butter, which may sound a little weird, but basically you get all the peanut butter flavor with a fourth of the calories and fat grams. You can find PB2 in your local grocery store, but the most affordable way to buy it is on Amazon HERE.

Of course, I also added a handful of dark chocolate chips {70% cocoa is the very best for your health – I love THIS brand}. 🙂 Next time I’m going to do walnuts or maybe some dried cranberries. Feel free to add your families favorites. I bet a little shredded coconut would be good too, or even a little bit of cinnamon and raisins.

All 4 of my kiddos love these, even my daughter that hates bananas, and my husband has been grabbing one in the morning on the way to work. Pretty cool to be able to hand them a cookie and know they are really eating bananas, oatmeal, and a little bit of peanut butter!

3 Ingredient Peanut Butter Banana Cookies

Ingredients
  • 2 ripe bananas, mashed
  • 1 cup oats (quick or regular)*
  • 2 tablespoons PB2 or natural peanut butter
  • optional mix-ins - dark chocolate chips, walnuts, coconut, cinnamon, raisins, etc.
  • * You can use either or a combination of both. If you use just old fashioned, chop them a little bit.
Instructions
  1. Grease a cookie sheet and preheat oven to 350 degrees F.
  2. Mix together the bananas, oats, and PB2.
  3. Because banana's vary in size you may need to adjust the amount of oats you add. The texture should be like a wet cookie dough.
  4. Add any mix-ins you want. Whatever you decide to add, stick to ¼ cup or less, or the dough won't stick together.
  5. Scoop dough onto the greased cookie sheet. I got 12 cookies from this recipe.
  6. Bake for 15 minutes at 350. ENJOY!
  7. I keep leftovers in the refrigerator. I also froze a batch and then thawed them in the fridge and they were still fantastic!

    The natural peanut butter wasn’t strong enough. Looks like I need to go by me some pb2. Or maybe double the peanut butter. We still devoured them though. Already a new staple recipe!

            I’m not Keisha, but I just made these with chocolate protein powder and fresh huckleberries and they’re great. Not too sweet like dessert cookies – so they’re perfect paired with black coffee to really bring out what little sweetness they do have, and it makes you feel just fine about having cookies as a coffee break snack!

    Do I just need to plop them on the sheet? Both times I’ve made them, they’ve been delicious. But I roll them into balls like normal cookies, but then they stay in smaller balls and are softer. Am I doing something wrong? They still taste good, but I couldn’t get the cookie shape and super hard etc

      Hi Meagan! If you can roll the dough into balls, then it is probably a little to thick and you might want to add a little less oats. You can also spread it out with a spoon a little bit before you cook them since they don’t really spread during cooking. I’m glad you like them though! 🙂

    Are they supposed to come out soft like a fruit bar consistency or did I not bake them long enough. Regardless they are delicious but I was not expecting how soft they stayed.

    Actually just came across this recipe and decided to make it. I added in cinnamon and cardamom. They came out delicious. The texture is something to get used to, since I’ve never had anything like this. But very happy to have something healthy to enjoy. 🙂

      Hi Heather! PB2 is powdered peanut butter, which sounds weird, but is actually really cool. It has all the flavor of regular peanut butter, but with way less calories. You can find it at most grocery stores, or on Amazon – http://amzn.to/1OLpqaQ

    I am allergic to oats. Do you have any idea how to incorporate gluten free flour I stead? Looking for a peanut butter cookie recipe that uses PB2 and bananas for the sweetener but without oats. Not having any luck. Help ☺

      That is tricky Kristy! Have you ever tried this recipe with flour? Just add enough flour to give it a wet/sticky dough texture. I’d love to know if it works!

        Will have to try it. Tried to make something similar using an egg, PB2 and honey. They tasted fine but had a really weird consistency. Going to keep playing around with ingredients. Will keep you updated Thanks for replying and please keep posting great recipes

    Just made these with my 2.5 year old daughter 🙂 she got to do most of the mashing/mixing with her hands- that ALONE made these her new favorite cookies! We separated the batter to make some with coconut, some with craisins, and some with craisins AND mini semi-sweet choc chips…so we have cookies to eat with breakfast, for snacks, and some to eat for dessert!! A perfectly versatile recipe…nothin I love more than finding multiple uses for something- especially when one use is fun, yummy (and healthy!) times with my little cutie! As we were chowing down, she told me “mommy, I really love baking with you! We did a really good job!” I’m seriously in mommy-heaven right now :)))

    This is such a great way to use up overrripe bananas. I’m shocked by how good they taste. Perfect for a pre-workout snack in the morning! I added some chia seeds for added nutritional benefit, and they add a nice little crunch.

      They can be a little soft, but if they are too soft, you probably didn’t add quite enough oats. That’s a little bit tricky because you need to add more or less depending on the size of your bananas. Hope you still enjoyed them! 🙂

    I just found this recipe and decided to try it since I have everything on hand. The only thing I did differently than you was add cinnamon and my bananas were medium so I added a pinch more oats. I used the chocolate PB2. I cannot wait to get them out of the oven and try them.

    Made a batch of them and they where a hit. I add cinnamon and chopped walnuts. It was a great alternative to heavy and super sweet cookies. My diabetic family members loved them. To bad I only had to bananas!

    I have been making these cookies since my daughter gave me the recipe. SO EASY…I add a cap full of vanilla, a sprinkle of cinnamon plus golden raisins & choc chips (no more than 1/4c but sometimes 1/2 c). NO FAIL perfect low cal cookie.

    I was so excited to see this recipe. Finally, something quick and easy to make with the over ripe bananas I end up with every week. My bananas were small so I used 3 and so added an extra 1/2 cup quick oats.. I didn’t have any raisins so I used just a few broken pieces of walnuts and a couple sprinkles of cinnamon, nutmeg, and coconut flakes. I baked them for 15 min at 350. They were a strange texture like eating a bowl of chewy oatmeal. I put them back in the oven for 5 minutes and they turned out like rubber oatmeal disks. I threw them away and decided I’ll make banana bread next time. I don’t know if my ratio of banana to oatmeal was off or if they needed to be baked more. But, these were just weird.

    Oh, my! I just cooked these in my air fryer! They are finished in 7 minutes! I added some raisins, cinnamon, a splash of vanilla, and about 1tablespoon of pecans. Thank you so much!!

    So I was wondering if it has to be pb2? I ask because my grocery store also sells powdered peanut butter in bulk that has basically the same nutritional value as the pb2. That should be fine right?

    I used Lily’s no sugar added semi-sweet chips. I used two servings which is 60 chips (yup, I counted them). I also added 1/2 tsp each of vanilla extract and kosher salt. I used a cookie scoop and got 23 cookies out of this. I am on the WW Purple Plan. These cookies came out to 1 point for a serving of two cookies. Yummy!!
