One thing I forgot to share on the show, however, is how easy it is to have these yummy and healthy options ready for your family. All you need is an hour or two, once a month.
Seriously.
I spend one Saturday morning each month and double or triple each of these recipes (and often these Oatmeal Pancakes). It makes a mess of the kitchen, but all of the recipes require a lot of the same ingredients which means you only have to get them out and make a mess once, instead of every morning.
Then our freezer is full of waffles, pancakes and healthy pop tarts, and the bin in the pantry is full of healthy instant oatmeal packets for quick and easy breakfasts. We rotate between these pre-made breakfasts, scrambled eggs and whole wheat toast, and occasionally these Overnight Steel Cut Oats and I don’t have to have another cooking day for a full month.
Yay for less stress in the morning and a cleaner kitchen! 🙂
