You only need 3 healthy real food ingredients to make these yummy {gluten free, sugar free, dairy free} 3 Ingredient Coconut Banana Cookies. So healthy, they are even perfect for breakfast or an after school snack!
On of the most popular recipes on the blog are the 3 Ingredient Peanut Butter Banana Cookies. I love them because, like this yummy variation, they really are only made of 3 ingredients. No tricks with boxed mixes or anything like there here, just 3 healthy real food ingredients.
You can add nuts or dark chocolate chips in you want, but even without they make a delicious breakfast, snack, or treat. They are a favorite in my kids lunch boxes too. I hope you and your family love them as much as mine do!
- 2 ripe bananas, mashed
- 1 cup oats (regular or quick)
- ¼ cup unsweetened shredded coconut
- optional mix-ins: dark chocolate chips, walnuts, dried cranberries, etc.
- Grease a cookie sheet, or use silicone baking mats and preheat oven to 350 degrees F.
- Mix together the mashed bananas, oats, and coconut. Because bananas vary in size, you may need to adjust the amount of oats you add. The texture should be alike a wet cookie dough.
- Add any mix-ins you want. Stick to a few tablespoons, so that the dough will still stick together.
- Scoop dough onto the cookie sheet. I got 12 cookies from this recipe.
- Bake for 15 minutes at 350. ENJOY!
- Keep leftovers in the refrigerator, or make a double or triple batch and freeze leftovers for quick breakfasts or school lunches.
1. Unsweetened Shredded Coconut: Dried coconut that isn’t sweetened can be tricky to find. Look for this Bob’s Red Mill brand, or look in the bulk bins at your local grocery store. It is so yummy, even without all that added sugar.
2. Dark Chocolate Chips: This is another one that can be tricky to find. I’m so excited because I just found this new brand on Amazon! Make sure you look for 70% cocoa or more so you get the awesome health benefits.
3. Silicone Baking Mats: These things are amazing! I just got some and feel like I’ve been missing out for years! No more scrubbing cookie sheets or scrapping stuck cookies from the pan. You absolutely have to get a set!

This is the first time I’ve ever made a paleo recipe, as I am just starting to try to feed myself and family all natural ingredients out of the desire to be more earth conscious and to nurture our bodies.
I added a little less than 1/4 cup of Demerara sugar and also a 1/4 cup extra od both oats and coconut as I used 3 small bananas.
The recipe turned out awesome! If I could upload a picture, you would see that I formed mine into circlular/disc shapes. They came out looking like a traditional cookie.
