A few weeks ago I had one of THOSE nights when I was completely unprepared for dinner. I had planned on throwing some Salsa Chicken into the crockpot, but completely forgot and ended up with 10 minutes to figure out what to feed my crew. I grabbed ingredients I already had in the fridge and threw together these super easy Mexican Pizzas in literally 10 minutes. Luckily, they were a huge hit! The kids even requested them the next night. I love it when I stumble upon new family favorites, and especially when the new recipes is as simple and healthy as this one!
And, did I mention that you can eat one of these Mexican Pizzas ALL BY YOURSELF for around 250 calories!? AND one pizza has 6g of fiber and 11g of protein. AWE-SOME. You know you’ve always wanted to eat an entire pizza by yourself and not even feel guilty about it.

Anyway, here is the quick, easy, and healthy real food recipe. You can use homemade Whole Wheat Tortillas, or just make sure you get 100% whole wheat ones from the store. Either one will work great. Enjoy!
- 1 Whole Wheat Tortilla
- 2 tablespoons chunky salsa
- 3 tablespoons black beans, drained and rinsed
- ¼ cup shredded part-skim mozarella cheese
- ¼ red bell pepper, sliced
- ¼ green bell pepper, sliced
- Preheat the oven to 350 degrees F.
- Spray both sides of the tortilla with a little olive oil. Bake for 3-4 minutes on each side, or until crisp and a little brown.
- Top with salsa, cheese, beans, and pepper slices.
- Return to the oven and cook until cheese is melted.
- Slice and eat the entire thing by yourself. 🙂
