Salsa Chicken Salad

One of my favorite ways to enjoy Ridiculously Easy Salsa Chicken, is added to a salad the next day for lunch. It is delicious, filling, high in fiber and protein, and low in calories! I’m actually terrible at eating leftovers, but this is one I really do enjoy!

Salsa Chicken Salad

Ingredients
  • 2 cups mixed greens
  • ½ cup Salsa Chicken
  • ½ cup Homemade Baked Tortilla Strips
  • ½ avocado, mashed
  • lime juice
Instructions
  1. Warm the leftover Salsa Chicken in the microwave if needed.
  2. Put mixed greens, chicken, avocado and tortilla strips in bowl. Squeeze lime juice over top, stir to mix all ingredients and enjoy!
