One of my favorite ways to enjoy Ridiculously Easy Salsa Chicken, is added to a salad the next day for lunch. It is delicious, filling, high in fiber and protein, and low in calories! I’m actually terrible at eating leftovers, but this is one I really do enjoy!
Salsa Chicken Salad
Ingredients
- 2 cups mixed greens
- ½ cup Salsa Chicken
- ½ cup Homemade Baked Tortilla Strips
- ½ avocado, mashed
- lime juice
Instructions
- Warm the leftover Salsa Chicken in the microwave if needed.
- Put mixed greens, chicken, avocado and tortilla strips in bowl. Squeeze lime juice over top, stir to mix all ingredients and enjoy!
