I just know you’re going to love this one. This Slow Cooker Honey Garlic Chicken and Vegetables is one of those recipes that is SO incredibly easy you won’t believe it. No more cooking chicken, roasting red potatoes and steaming vegetables separately!  Just throw them all into a Slow Cooker {i.e. Crock Pot} and have a delicious healthy dinner on the table. And, this one is a crowd pleaser! My whole family including my husband and four picky kids devoured it.

The chicken ends up so moist and flavorful and the veggies are cooked to perfection. My favorite is the combo of honey and garlic! A little bit of sweet and so flavorful! I think it’s officially my favorite combo, I know you’ll love it too!

Serves: 8 servings
Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 pound red potatoes, halved
  • 1 pound baby carrots
  • 1 pound green beans, trimmed
  • ½ cup reduced sodium soy sauce
  • ⅓ cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
Instructions
  1. Put chicken breasts, potatoes and carrots in a 6-7 quart slow cooker.
  2. In a separate bowl whisk together soy sauce, honey, garlic, basil, oregano and pepper.
  3. Pour the soy sauce mixture over the chicken and vegetables. Cook on low for 7-8 hours or on high for 3-4 hours. Add the green beans during the last 30 minutes of cooking time.
  4. Enjoy!

    Not sure what I did wrong, but this is the first time I’ve ever had meat turn out dry in a slow cooker. I just reviewed the recipe again, and I followed it exactly except I didn’t have quite enough soy sauce so I used bourbon sauce and water to make up the same amount of liquid. Set the slow cooker on low for 7.5 hours. Everything was black on the outside and the chicken was really dry. I was really looking forward to it & am sad it didn’t turn out like I hoped.

      I’m so sorry to hear that! If you’re using a large slow cooker you may need to decrease the cooking time to more like 6 hours.

      I can’t seem to post a new review, so I will piggyback on what Raxhel posted. I followed this recipe to the letter and cooked for 4 hours. It was just awful. The chicken was like dry shredded leather, the potatoes were mush and the carrots were still hard. Worst of all, everything was brown….such a dark unappetizing brown that my kids were fighting me about eating it. The sauce has potential perhaps if cooked separately, but beyond that, big miss here.

        So sorry to hear that! It sounds like it was over cooked. Every slow cooker is different, so it’s hard to give exact directions, but if you ever try it again I’d definitely cut down on the cooking time or temperature.

            You can use frozen chicken, you’ll just need to increase the cooking time.

      I also followed the recipe to the letter. Everything did come out an unappetizing color, not at all like the picture. And the sauce itself was not very good, even a little bitter. I’ve made a honey roasted chicken that was to die for, but this recipe just wasn’t very good. And I use the crock pot often!

    I am a terrible cook, but I made this for my family tonight and they loved it! It was the first time they have ever enjoyed anything I have made lol! The only things I did different were that I cooked the chicken, potatoes, and carrots in the oven because I didn’t have time to slow cook, I cut out the soy sauce, and I steamed the green beans on the stove top. Like I said, they loved it!

      No need to add water, there will be plenty of liquid by the time it finishes cooking.

      If you have a nice big slow cooker, you should just be able to do the maximum cooking time.

    I’m trying this for dinner tonight. I used 1/4 cup of soy sauce and a 1/4 cup of ketchup instead of 1/2 cup of soy sauce. Will update
    With results this evening.

    I really liked this recipe. I made a couple of changes: quartered the potatoes, placed frozen green beans in with other ingredients, used 1/4 cup each of soy sauce and ketchup, added 3/4 cup of no salt chicken stock. My family loved it!

      Glad you liked it Paula! You can always leave the skin on the potatoes and even the carrots if the coloring bugs you. That should help a little. 🙂

      Since you’ll be using a smaller slow cooker the cooking times shouldn’t be too different. I’d just plan on the lower end of the cooking times. Hope you enjoy it!

      So sorry it didn’t work for you Betty! It sounds like maybe it was overcooked. Every crockpot/slow cooker is different, so it’s hard to know the best time. If you ever do decide to try it again, I’d try cooking it on low and/or cutting back on the cooking time.

      With thawed chicken on low it’ll probably take 6-7 hours. Cook time will depend on other factors too though, like the size of your slow cooker/crockpot. Smaller slow cookers that are full of food will take longer, a bigger slow cooker with lots of extra room will take less time. Hope that helps!

      Yes, I just put all the ingredients into a gallon sized ziploc bag and keep it in the fridge or freezer uncooked until I’m ready to dump it in the slow cooker!

      I’ve never tried it, but it should work. You’ll just want to pay attention to the cook time on the sweet potatoes so they don’t end up too mushy/falling apart.

    It’s says it serves 8 but how would 4 chicken breast serve 8 people? 8 people is the number of guest I’ll have, should I get more chicken breast and double the recipe?

      Hey Autumn! With all the other things with it, I just serve half a chicken breast to each person. If you want everyone to have a full chicken breast I would double the recipe. 🙂

      Hey BreAnna! I’d probably cut everything in half. You might need more than half the cooking time, but this is not one that you want to way over cook.

    I thought I had chicken breasts but I don’t! But I do have 10 boneless chicken tenders–how should I adjust the recipe/cook time for this? I also plan to be a lazy butt and just use canned sliced carrots and canned whole potatoes–should I put these in at the beginning or wait a few hours. I am going to be out most of the day, so I want to do the longer cook time on LOW. Thanks in advance!

    Made this today and our entire family LOVED it! Based on my slow cooker I will cook gor less time next time I make it. The chicken was a bit dry so we spooned some of the leftover sauce on it and it was fine!

    We left out the carrots and added extra potatoes since we’re not “cooked carrots” people. A winner!!!

    Tried this and not happy with the looks nor the taste. Again, as previous comments made, it was black. not appealing right there. Next, all I tasted was soy sauce, no honey or garlic. I used a thicker chicken breast which was decent in moisture content. Added rice as side to complement the meal.

    I just made this and it was super easy and taste yummy! I used frozen chicken breast and added onion…i put the potatoes and carrots and onion on the bottom and chicken on top and cooked on high for 3 and a half hours. I didnt add the green beans… will definitely make it again. Thank you!

    I did this today. Chicken taste was delicious and so did the potatoes and carrots but they got this brown wierd color. Will surely make the chicken again with some rice instead.

    One of my boyfriend and I’s favorite meals!! The best part was — we pretty much had every ingredient needed, so we didn’t have to spend a ton of $$. The chicken fell apart and had so much flavor — he seriously asks me to make this every week.

    I made this recipe today using thick frozen chicken breasts, cut soy sauce to 1/4 cup and added fresh mushrooms. accidently added frozen green beans at the beginning. I added 3/4 C. chicken broth and cooked for 7 1/2 hours on low. It turned out beautifully. The chicken broth smoothed out the strong taste of the soy sauce. Thanks for the recipe. Will make again

    I halved this recipe and cooked it for 7 hours in a 4.5qt crockpot. It was just okay. The chicken breast was on the dry side, but I don’t blame the recipe for that – chicken breast does tend to be dry. It wasn’t so dry that it was inedible, though. The potatoes were cooked to the perfect texture, but absorbed the majority of the liquid and took on an almost bitter flavor. I would make this again but with a few changes. I would marinate the chicken breast in the liquid before putting it into the slow cooker. I would also add some butter chunks on top of everything and some salt sprinkled over the veggies. I give the recipe 3 stars because I think it’s a good start to a great recipe, with some modifications.

    I was a little hesitant to make the recipe after I read through the reviews. However, my conclusion is that it has great flavor, but it definitely needs more liquid when cooking. It came out very dry. I would definitely modify it before making it again.
